1 & 1/2 cups wholemeal self-raising flour
2 & 1/2 tablespoons sugar
1 teaspoon cinnamon
2 eggs
1/2 cup milk
1/2 cup ricotta cheese
1/3 cup vegetable oil
1 granny smith apple peeled and grated


Combine all ingredients and mix well until combined.
Pour into a doughnut mould baking tin.
Bake at 180oC for around 12-15 minutes or until golden brown.
Allow to cool before turning out.
Lightly sprinkle with some caster sugar and cinnamon.
Makes around 12 doughnuts.

– if you don’t have a doughnut tin you can use this mixture to make pikelets.
– if you find the doughnuts a little heavy and “doughy” you can leave out the ricotta and they are still a great healthy snack!
