Make the base using the Dietitian For Kids Healthy Low GI Slice recipe.
400g Skim Greek Yoghurt (no added sugar) such as Evia Skim Greek Yoghurt
4 tablespoons cornflour
1 punnet (125g) of raspberries or 125-150g fruit of choice
Preheat oven to 180oC.
Grease a 12-cup muffin tray.
Make the base following the method on the Healthy Low GI Slice page.
Using approximately a tablespoon of mixture, press the base into a muffin tray.
The mixture makes around 12 bases.
Bake the base for 7 minutes until lightly golden brown. The mixture will have puffed up slightly.
Remove from the oven and press the mixture down gently with a spoon to create a cup shape.
Combine all the filling ingredients and blend until well combined.
Pour some filling into each of the bases in the muffin tray.
Return to the oven and bake for around 15 minutes or until centre is firm.
These can be served warm or cold.
