350g of fruit, e.g. 1 ripe banana, 2 x 125g punnets of raspberries (grated apple, blueberries, strawberries, fresh apricots would also work well)
3/4 cup milk
1/2 cup vegetable oil
1 & 1/2 cups wholemeal self-raising flour
½ cup brown sugar
Top with, or stir through, some pumpkins seeds, or white, milk or dark chocolate chips
Place all ingredients in a food processor and blend until well combined.
Place 2 tablespoons of mixture into each well of a well-greased muffin tray.
Bake in a 180oC oven until golden brown, approximately 25 minutes.
