Ingredients

  • 1 cup wholemeal plain flour
  • 1/2 cup brown sugar
  • 1 cup rolled oats
  • 1/2 cup desiccated coconut
  • 1/2 cup LSA mix (or flaxseed meal for lunch box friendly)
  • 2 Tab almond butter (leave out for lunchbox friendly)
  • 100g butter
  • 2 Tab golden syrup
  • 1/2 teaspoon bicarbonate of soda
  • 2 tablespoons hot water
  • 50g dark chocolate

Methods

  • Preheat oven to 180C.
  • Combine flour, sugar, oats, coconut, LSA mix
  • Melt butter, almond butter and golden syrup in a saucepan
  • Dissolve soda in hot water
  • Add soda and water to butter mixture, mix until frothy
  • Add to dry ingredients and mix until combined
  • Press into a lined rectangular baking tray (28cm x 18cm)
  • Bake for 25 minutes or until golden brown
  • Melt dark chocolate and drizzle over baked slice
