60g butter, softened

1/4 cup vegetable oil, e.g. sunflower or canola oil

½ cup sugar

1 teaspoon vanilla essence

3 eggs

1 cup self raising flour

1 cup almond meal

2/3 cup milk



  1. Preheat the oven to 180 degrees celsius. 
  2. Beat the butter, sugar and vanilla essence together on high speed until the butter turns pale yellow.
  3. Add the 2 eggs and beat on medium speed for around a minute until well combined.
  4. On low speed, gradually add the flour, almond meal and milk.
  5. Mix on low speed until combined.
  6. Spoon into a cupcake baking tray and bake for approximately 15 minutes until golden brown.


Makes 12 cupcakes.


Tip: You may like to add choc chips or blueberries etc to add some extra flavour.
